Argentina Recipes: Locro Soup

Although summer is beating down our doors in Argentina, we know that in other parts of the world, winter is in full swing. A great Argentina recipe that is popular to cozy up with is locro: a hearty, traditional stew that will warm you up even on the coldest days.
Get ready to make this very simple Argentina recipe that will please guests, family and friends!

Argentina Recipes: Locro

You’ll need:

250g beef on the bone
2 sausages
100g smoked bacon
250g pork
2 tall leeks
1/2kg corn
3 onions
1 1/2 tablespoons red pepper seasoning
1 tablespoon cumin
500g squash
1/2kg beans of your choice
Salt and pepper


Leave the corn and beans in water overnight to soak. The next day, cook over low fire with the same water that was used for soaking from an hour and a half to two hours, adding water if necessary.
Add meat, cook for an extra hour.
Remove the meat, cut into small pieces and re-add it to the pot. Add the vegetables and cook until tender.
Top it with cheese and enjoy! Buen provecho.
